Docosahexaenoic Acid Ester Degradation Measured by FTIR-ATR with Correlation Spectroscopy
نویسنده
چکیده
Highly unsaturated fatty acids such as docosahexaenoic acid and linolenic acid are prone to oxidation with a resulting loss of bioactivity and generation of malodorous degradation compounds. Degradation proceeds by formation of the corresponding hydroperoxyl free radical with subsequent oxidative cleavage at the double bond site. FTIR-ATR was used to detect degradation through spectral changes that were correlated to oxidative degradation. The spectrometer was equipped with a heated stage so that a series of spectra could be collected while the sample was exposed to elevated temperatures. The appearance of new bands at 972.8 cm1, 2934 cm1, and 3498 cm1 with the disappearance of bands at 703.6 cm1 and 3013 cm1 were observed after heating and these spectral changes were evaluated by correlation spectroscopy analysis. These results provide a method to quickly detect the oxidative degradation of polyunsaturated fats. This approach is expected to be applied for the quality assessment of feed formulations fortified with omega-3 fatty acids.

This study is aimed at evaluating the performance of tetrakismethylene-3-3,5-di-tert-butyl-4-hydroxyphenyl propionate methane S1010, tris2,4-di-tert-butylphenyl phosphite S1680 and ascorbic acid AA antioxidants in stabilization of hydroxypropyl cellulose HPC. For this purpose, a number of films with weight percent ratios of 0.4 w/w were prepared in a 1 isopropanol solution w/v. Then, the films ...
متن کاملDetermination of the Degree of Degradation of Frying Rapeseed Oil Using Fourier-Transform Infrared Spectroscopy Combined with Partial Least-Squares Regression
This rapid method for determining the degree of degradation of frying rapeseed oils uses Fourier-transform infrared (FTIR) spectroscopy combined with partial least-squares (PLS) regression. One hundred and fifty-six frying oil samples that degraded to different degrees by frying potatoes were scanned by an FTIR spectrometer using attenuated total reflectance (ATR). PLS regression with full cros...

A new Fourier transform infrared (FTIR) spectroscopic method based on single-bounce attenuated total reflectance (SB-ATR) spectroscopy was developed for the analysis of distilled liquors and wines. For distilled liquors, a partial least-squares (PLS) calibration was developed for alcohol determination based on the SB-ATR/FTIR spectra of mixtures of ethanol and distilled water. An independent se...
متن کاملSurface functionalization of germanium ATR devices for use in FTIR-biosensors.
Biosensors based on intrinsic detection methods have attracted growing interest. The use of Fourier transform infra-red (FTIR) spectroscopy with the attenuated internal total reflection (ATR) mode, in the biodetection context, requires appropriate surface functionalization of the ATR optical element. Here, we report the direct grafting of a thin organic layer (about 20 A depth) on the surface o...
متن کاملTrans Fatty Acid Analysis of Frying Oil Using ATR-FTIR Spectroscopy: A Study on Indian Traditional Snack Foods
Background: Trans Fatty Acid (TFA) content in oil is an important quality parameter due to its adverse health effect. This study was aimed to examine the TFA content in the frying oil used by street food vendors in India for two traditional snack foods. Methods: Totally, 143 oil samples were collected at different frying times (0, 2, and 4 h) from five different vendors for Samosa and Jalebi. ...
